  • 1 cup granulated sugar
  • 2 large egg whites
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Sliced almonds for topping (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, granulated sugar, egg whites, almond extract, vanilla extract, and a pinch of salt. Mix until a smooth dough forms.
  3. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  4. If desired, gently press a sliced almond onto the top of each cookie.
  5. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. Optional: Dust with powdered sugar before serving.

Notes

For best results, ensure the almond flour is finely ground, and consider letting the cookie dough rest in the refrigerator for about 30 minutes before shaping and baking for improved texture and flavor.
