BBQ Bacon Meatloaf

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup barbecue sauce (plus extra for topping)
  • 1/2 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 6 slices bacon

Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  • Combine ground beef, ground pork, breadcrumbs, onion, garlic, barbecue sauce, cheddar cheese, eggs, milk, salt, and pepper in a bowl. Mix thoroughly.
  • Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
  • Lay bacon slices on top, tucking the edges under. Brush additional barbecue sauce over the bacon.
  • Bake for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let it rest for 10 minutes before slicing and serving with extra barbecue sauce if desired.

  • For a gluten-free option, use gluten-free breadcrumbs.
  • Add diced bell peppers or shredded carrots for extra flavor and texture.
