Beet and Orange Salad

Instructions

  1. Roast Beets: Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until fork-tender. Let them cool before peeling and slicing into wedges for the salad.
  2. Prepare Oranges: While the beets are cooling, segment the fresh oranges by cutting off the ends and slicing along the membrane to release juicy segments. Set aside in a bowl to capture any dripping juice.
  3. Mix Greens: In a large salad bowl, combine your choice of mixed greens, such as arugula and spinach. This will be the crunchy base for your vibrant salad.
  4. Add Onion & Feta: Thinly slice the red onion and scatter over the greens, along with crumbled feta cheese. If the onion flavor is too strong, soak the slices in water for a few minutes before adding.
  5. Toast Walnuts: In a dry skillet over medium heat, toast the chopped walnuts for about 5 minutes until fragrant. Keep an eye on them to prevent burning, then add them to the salad for added crunch.
