  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Crumble Topping:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the berries are evenly coated. Transfer the mixture to a baking dish.
  3. In a separate bowl, prepare the crumble topping by mixing oats, flour, brown sugar, cinnamon, and salt. Add the cold diced butter and use your fingers to rub the butter into the dry ingredients until it resembles coarse crumbs.
  4. Sprinkle the crumble topping evenly over the berry mixture in the baking dish.
  5. Bake in the preheated oven for 35-40 minutes or until the berries are bubbling, and the topping is golden brown.

Notes

For added richness, serve the berry crumble with a scoop of vanilla ice cream or a dollop of whipped cream. Adjust the sugar quantity based on the sweetness of the berries and personal preference.
