Biscoff Salted Caramel Cheesecake

For the Crust:

  • 2 cups Biscoff cookie crumbs
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup Biscoff cookie spread

For the Salted Caramel Sauce:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 tsp sea salt

For Garnish:

  • Additional Biscoff cookie crumbs
  • Sea salt flakes

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine Biscoff cookie crumbs and melted butter for the crust. Press the mixture into the bottom of the prepared pan to form an even crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and Biscoff cookie spread until well combined.
  4. Pour the cheesecake filling over the crust in the pan, spreading it evenly. Tap the pan on the counter to remove any air bubbles.
  5. Bake in the preheated oven for 50-60 minutes or until the center is set and the top is lightly browned. Allow the cheesecake to cool in the pan, then refrigerate for at least 4 hours or overnight.
  6. For the salted caramel sauce, heat granulated sugar in a saucepan over medium heat, stirring constantly until it melts and turns amber in color. Add butter and stir until melted. Slowly pour in the heavy cream while stirring continuously. Stir in sea salt and let the caramel sauce cool.
  7. Once the cheesecake has chilled, drizzle the salted caramel sauce over the top. Garnish with additional Biscoff cookie crumbs and sea salt flakes.

Notes

For a richer flavor, consider adding chopped Biscoff cookies to the cheesecake batter or using extra caramel sauce for serving. Adjust the salt level in the caramel according to your taste preferences.
