  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 2 cups water

Instructions

  • Prepare the strawberries by washing them thoroughly, removing the hulls, and slicing them.
  • In a blender or food processor, blend the sliced strawberries until smooth.
  • Strain the strawberry puree using a fine mesh strainer or cheesecloth into a large bowl.
  • Juice the lemons and strain to remove any pulp or seeds.
  • In a saucepan, combine sugar and water, and heat over medium heat until the sugar dissolves completely. Let it cool slightly.
  • Mix the strawberry puree and fresh lemon juice into the cooled sugar syrup, stirring to combine.
  • Using a funnel, pour the concentrate into clean bottles or jars, leaving about 1/2 inch of headspace. Seal with lids.
  • Store in the refrigerator for up to 1 week, or freeze for longer storage.

  • Adjust the sweetness by adding more sugar or using a natural sweetener like honey or agave.
