Red Lobster-Inspired Chicken Cobbler

  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Biscuit dough (store-bought or homemade)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, cook chicken until browned. Remove and set aside.
  3. In the same skillet, melt butter and stir in flour to create a roux.
  4. Gradually whisk in chicken broth and milk until smooth.
  5. Add thyme, salt, and pepper. Simmer until thickened.
  6. Stir in cooked chicken, peas, carrots, celery, and mushrooms.
  7. Transfer mixture to a baking dish.
  8. Drop biscuit dough on top of the filling.
  9. Bake until biscuits are golden and the filling is bubbly, about 20-25 minutes.
  10. Let it cool for a few minutes before serving.
