Chocolate Cheesecake

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semisweet chocolate chips, melted
  • Whipped cream and chocolate shavings for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and cocoa powder, continuing to beat until well combined.
  4. Add eggs one at a time, beating well after each addition. Mix in the sour cream and vanilla extract.
  5. Fold in the melted chocolate until evenly incorporated into the batter.
  6. Pour the batter over the crust in the springform pan, spreading it evenly.
  7. Bake in the preheated oven for about 1 hour, or until the center is set.
  8. Allow the cheesecake to cool in the oven with the door ajar for about 1 hour. Then refrigerate for at least 4 hours or overnight.
  9. Once chilled, remove from the springform pan and garnish with whipped cream and chocolate shavings if desired.

Notes

For best results, use high-quality chocolate for melting, and ensure all ingredients are at room temperature before starting. The longer the cheesecake chills, the better the texture and flavor will develop.
