Chocolate Mousse Cake

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup melted butter
  • 2 cups semisweet chocolate chips
  • 1/2 cup unsalted butter
  • 1/4 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream
  • 1/3 cup granulated sugar
  • 4 large eggs
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a heatproof bowl, melt chocolate chips and butter over simmering water, stirring until smooth. Remove from heat and stir in coffee and vanilla extract. Let it cool slightly.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add sugar and continue whipping until stiff peaks form.
  5. Add eggs one at a time to the chocolate mixture, beating well after each addition. Add salt and mix until combined.
  6. Gently fold the whipped cream into the chocolate mixture until well combined.
  7. Pour the chocolate mousse over the crust in the springform pan. Smooth the top with a spatula.
  8. Refrigerate for at least 4 hours or overnight until set.
  9. Before serving, run a knife around the edge of the pan to loosen the cake. Remove the sides of the springform pan.

Notes

For a richer flavor, you can use dark chocolate in the mousse or ganache. Adjust the sweetness according to your preference. Ensure all components are well-chilled for the best texture.
