Ingredients

  • 1 1/4 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/3 cup black olives, sliced

For the Balsamic Dressing:

  • 1/4 cup balsamic vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring water to a boil. Stir in couscous, cover, and remove from heat. Let it stand for 5 minutes, then fluff with a fork.
  2. In a large bowl, combine couscous, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, feta cheese, and black olives.
  3. In a separate bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the couscous mixture and toss until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
