Ingredients

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 cup warm milk (110°F/43°C)
  • 1/4 cup granulated sugar
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • Oil, for frying

For the Creme Brulee Filling:

  • 1 cup heavy cream
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract

For the Brulee Topping:

  • 1/4 cup granulated sugar

Instructions

  1. In a bowl, combine the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Add the yeast mixture, softened butter, egg yolks, and vanilla extract. Mix until a dough forms.
  3. Knead the dough on a floured surface until smooth, then place it in a greased bowl. Cover and let it rise for 1-2 hours, or until doubled in size.
  4. In the meantime, prepare the creme brulee filling by whisking together heavy cream, egg yolks, sugar, cornstarch, and vanilla extract in a saucepan. Cook over medium heat until thickened. Let it cool.
  5. Roll out the risen dough and cut out donut shapes. Place them on a baking sheet and let them rise for another 30 minutes.
  6. Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the donuts until golden brown, then drain on paper towels.
  7. Once the donuts are cooled, fill a piping bag with the creme brulee filling and inject it into the center of each donut.
  8. Sprinkle sugar on top of each filled donut. Use a kitchen torch to caramelize the sugar until it forms a crispy brulee topping.

Notes

Ensure the creme brulee filling is completely cooled before injecting it into the donuts to prevent them from becoming soggy. Adjust sugar quantity based on personal preference for sweetness.
