Ingredients

Scale

For the Crispy Fried Cauliflower:

  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • Vegetable oil, for frying

For the Herb Yogurt Dip:

  • 1 cup plain Greek yogurt
  • 2 tablespoons chopped fresh herbs (parsley, dill, chives)
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the Cauliflower:
Cut the cauliflower into bite-sized florets and set aside.
  2. Mix the Coating:
In a bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
  3. Dip and Dredge:
Submerge each cauliflower floret into the buttermilk, then coat it evenly in the flour mixture.
  4. Heat the Oil:
In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
  5. Fry the Cauliflower:
Fry the florets in small batches, ensuring they are not overcrowded. Cook for 3-4 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  6. Make the Dip:
In a bowl, whisk together Greek yogurt, chopped fresh herbs, lemon juice, minced garlic, salt, and pepper until smooth and creamy.
  7. Serve:
Arrange the fried cauliflower on a serving platter and garnish with additional herbs, if desired. Serve hot with the herb yogurt dip on the side.

Notes

  • Oil Temperature: Keep the oil temperature consistent to ensure the cauliflower fries evenly without becoming greasy.
  • Batch Frying: Avoid overcrowding the pan to maintain the oil’s heat and crisp up the coating perfectly.
  • Make Ahead: The herb yogurt dip can be prepared up to 2 days in advance and stored in the refrigerator.
  • Healthier Alternative: For a lighter version, bake the cauliflower at 425°F (220°C) for 20-25 minutes, flipping halfway through, or air fry at 375°F (190°C) for 12-15 minutes.
  • Customization: Experiment with seasonings in the flour mixture, like cumin, turmeric, or Parmesan cheese, to suit your taste.
