Ingredients

Scale
  • 3 lbs green leafy vegetables (shepherd’s purse, baby bok choy, napa cabbage, or Chinese chives)
  • pounds ground pork
  • 2/3 cup Shaoxing wine
  • ½ cup neutral oil (canola, vegetable, or avocado)
  • 3 tablespoons sesame oil
  • 1 tablespoon salt
  • 3 tablespoons soy sauce
  • ¼ teaspoon white pepper
  • 2/3 cup water plus more for assembly
  • 3 packages dumpling wrappers

Instructions

  1. Wash the Vegetables: Begin by thoroughly washing your leafy greens to remove any grit.
  2. Blanch the Greens: Blanch your vegetables in boiling water for about 1 minute for delicate leaves or 2 minutes for sturdier greens.
  3. Cool Down: Cool the blanched greens in an ice bath or under cold running water.
  4. Drain and Chop: Drain the vegetables well and chop them finely.
  5. Combine the Filling: Mix your chopped vegetables with ground pork in a large bowl.
  6. Add Flavor: Pour in the Shaoxing wine, neutral oil, sesame oil, salt, soy sauce, white pepper, and water.
  7. Mix Well: Vigorously mix the filling for 6-10 minutes until smooth and paste-like.
  8. Prepare Wrappers: Dampen the edges of each dumpling wrapper with a little water.
  9. Fill the Dumplings: Spoon in a little less than 1 tablespoon of filling into the center of each wrapper.
  10. Seal the Dumplings: Fold the wrapper in half and pinch it to seal, creating pleats on each side.
  11. Arrange for Cooking: Place finished dumplings on a parchment-lined baking sheet.
  12. Test the Filling: Boil a few dumplings and taste, adjusting seasoning if necessary.
  13. Freeze for Later: Arrange and freeze dumplings on lined trays.
  14. Cooking Methods: Boil, pan-fry, or steam your dumplings as desired.
