Biscoff Tiramisu

  • 1 cup strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur (optional)
  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 package (7 ounces) Biscoff cookies
  • Biscoff cookie crumbs for garnish
  • Cocoa powder for dusting

Instructions

  1. In a shallow dish, combine the brewed coffee and coffee liqueur (if using).
  2. In a mixing bowl, whip the mascarpone cheese until smooth.
  3. In a separate bowl, whip the heavy cream, sugar, and vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone cheese until well combined.
  5. Dip each Biscoff cookie into the coffee mixture, ensuring they are soaked but not overly saturated.
  6. Arrange a layer of dipped cookies in the bottom of a serving dish.
  7. Spread half of the mascarpone mixture over the layer of cookies.
  8. Repeat the layers, finishing with a layer of the mascarpone mixture on top.
  9. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
  10. Before serving, dust the top with cocoa powder and sprinkle Biscoff cookie crumbs.

Notes

For a stronger coffee flavor, you can increase the amount of coffee or add more coffee liqueur. Adjust sugar according to your taste preference. Ensure that the Biscoff cookies are fully dipped but not overly soaked to maintain a good texture in the tiramisu.
