Elk Roast Recipe

- 1 elk roast (3–4 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- 1 cup beef broth
- 1 onion, sliced
- 3 carrots, peeled and chopped
- 3 potatoes, diced
- Preheat oven to 325°F (163°C).
- Rub elk roast with olive oil, salt, pepper, garlic powder, thyme, and rosemary.
- Place roast in a roasting pan, add beef broth, onions, carrots, and potatoes.
- Cover and roast for 2.5-3 hours, basting occasionally.
- Uncover for the last 30 minutes for a golden crust.
- Let it rest before slicing.
