Elk Roast Recipe

  • 1 elk roast (34 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • 1 cup beef broth
  • 1 onion, sliced
  • 3 carrots, peeled and chopped
  • 3 potatoes, diced

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Rub elk roast with olive oil, salt, pepper, garlic powder, thyme, and rosemary.
  3. Place roast in a roasting pan, add beef broth, onions, carrots, and potatoes.
  4. Cover and roast for 2.5-3 hours, basting occasionally.
  5. Uncover for the last 30 minutes for a golden crust.
  6. Let it rest before slicing.
