  • 2 cups all-purpose flour
  • ½ cup potato starch
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 tsp sea salt or kosher salt
  • 1 tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ cup + 1 tbsp sour cream
  • 3 tbsp blue cheese crumbles
  • 3 minced garlic cloves
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp dried chives
  • 1 tsp onion powder
  • ¼ tsp sea salt
  • ½ tsp freshly ground black pepper

Instructions

  1. Prepare the Chicken: Slice the chicken breasts in half lengthwise and pound them to ¼” thickness.
  2. Marinate: Place the chicken in an airtight container or resealable bag, fully submerging it with buttermilk.
  3. Mix the Breading: Whisk together the all-purpose flour, potato starch, oregano, smoked paprika, salt, black pepper, cayenne, garlic powder, and onion powder in a large bowl.
  4. Coat the Chicken: Remove each chicken piece from the marinade and thoroughly coat it in the breading mixture.
  5. Rest the Chicken: Let the breaded chicken rest on a plate for 15 minutes.
  6. Heat the Oil: In a large cast iron skillet, heat 2-3 inches of oil over medium-high heat.
  7. Fry the Chicken: Carefully fry the chicken in batches of two for about 3-4 minutes per side.
  8. Drain the Chicken: Once cooked, transfer the fried chicken to a wire rack placed over a baking sheet.
  9. Prepare the Buffalo Sauce: Whisk together the melted butter and hot sauce until well combined.
  10. Coat with Buffalo Sauce: Dip each piece of fried chicken into the buffalo sauce.
  11. Make the Dilly Blue Cheese Sauce: In a bowl, combine sour cream, blue cheese crumbles, minced garlic, fresh dill, lemon juice, chives, onion powder, salt, and black pepper.
  12. Assemble the Sandwich: Butter and toast the brioche buns cut-side down in a pan.
  13. Serve Immediately: Enjoy your Epic Buffalo Chicken Sandwich fresh.

Notes

  • Perfect Marinade: Marinate for at least 4 hours; overnight ensures the chicken is exceptionally tender.
  • Crispy Coating: Combine potato starch with flour in the breading to achieve an ultra-crispy exterior.
  • Oil Temperature: Test the oil by dropping in a pinch of breading.
  • Rest the Chicken: Allow the breaded chicken to rest for 15 minutes before frying.
  • Sauce Ahead: Make the dilly blue cheese sauce in advance for ease.
