Ingredients

For the Chocolate Glaze:

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons hot water

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water and butter over medium heat until the butter melts. Bring to a boil.
  3. Add flour and salt to the boiling mixture, stirring continuously until a smooth dough forms. Remove from heat.
  4. Allow the dough to cool slightly, then add eggs one at a time, beating well after each addition until the dough is smooth and glossy.
  5. Transfer the dough to a pastry bag and pipe 4-inch long strips onto the prepared baking sheet, leaving space between each eclair.
  6. Bake for 15 minutes at 425°F (220°C), then reduce the temperature to 375°F (190°C) and bake for an additional 10-15 minutes until eclairs are golden brown and puffed.
  7. Remove from the oven and let them cool completely on a wire rack.

For the Filling: 8. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  1. Cut each eclair in half horizontally and pipe or spoon the whipped cream filling into the bottom half.

For the Chocolate Glaze: 10. In a heatproof bowl, melt chocolate chips and butter over a double boiler or in the microwave.

  1. Stir in powdered sugar and vanilla extract. Add hot water gradually until the glaze reaches a smooth and pourable consistency.
  2. Dip the top of each filled eclair into the chocolate glaze, allowing excess to drip off.

Notes

For best results, ensure that the eggs are at room temperature and add them one at a time, incorporating each fully before adding the next. The pastry should be smooth and hold its shape when piped.
