German Potato Salad

Ingredients

  • 2 pounds (about 900g) red potatoes, boiled and sliced
  • 6 slices bacon, chopped
  • 1 small onion, finely chopped
  • 1/3 cup (80ml) apple cider vinegar
  • 1/4 cup (60ml) vegetable broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon fat in the skillet.
  2. Add chopped onion to the skillet and sauté until softened.
  3. Stir in apple cider vinegar, vegetable broth, Dijon mustard, and sugar. Bring to a simmer.
  4. Add the sliced potatoes and crispy bacon to the skillet. Toss gently until the potatoes are well coated with the dressing.
  5. Season with salt and pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Remove from heat, sprinkle with fresh parsley, and toss once more before serving.

Notes

Note: German Potato Salad is best served warm, allowing the flavors to develop. You can prepare the salad in advance and reheat gently on the stove or in the microwave before serving. The bacon adds a smoky richness, but for a vegetarian version, omit it or use a meat substitute. Feel free to adjust the sweetness and tanginess of the dressing by tweaking the amount of sugar and apple cider vinegar to suit your taste preferences. This classic dish is a delightful side for any gathering or as a comforting accompaniment to your favorite grilled meats.
