Grinder Salad Recipe

Ingredients

  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cooked and shredded chicken
  • 1/2 cup crumbled feta cheese
  • 1/4 cup black olives, sliced
  • 1/4 cup sunflower seeds

Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Add the shredded chicken, feta cheese, black olives, and sunflower seeds to the bowl.
  3. In a small jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. Serve the grinder salad in individual bowls, garnishing with additional feta cheese and sunflower seeds if desired.
