Instructions

  • Preheat your oven to four hundred degrees Fahrenheit (two hundred degrees Celsius) and line a baking sheet with parchment paper.
  • Combine breadcrumbs, Parmesan, oregano, thyme, salt, and pepper in a shallow dish.
  • Dip pork chops in beaten eggs, then coat with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat. Sear pork chops for two to three minutes per side until golden brown.
  • Transfer pork chops to one side of the prepared baking sheet.
  • Toss mixed vegetables with olive oil, garlic powder, salt, and pepper. Spread them on the other side of the baking sheet.
