For the Meatloaf:

  • 1 lb ground beef
  • 1/2 lb ground pork (or substitute with more ground beef)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

For the Glaze:

  • 1/4 cup ketchup
  • 2 tbsp honey
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan by greasing or lining it with parchment paper.
  2. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, eggs, honey, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and parsley. Mix thoroughly but gently.
  3. Transfer the mixture to the prepared loaf pan, shaping it into a firm loaf.
  4. In a small bowl, prepare the glaze by mixing ketchup, honey, and Dijon mustard.
  5. Spread half of the glaze evenly over the meatloaf.
  6. Bake the meatloaf for 45 minutes.
  7. Remove from the oven and apply the remaining glaze. Bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing. Serve with extra glaze if desired.

Notes

  • For a gluten-free option, replace breadcrumbs with gluten-free breadcrumbs or crushed oats.
  • To add a smoky flavor, include 1/2 tsp smoked paprika in the meat mixture.
  • Adjust the glaze to taste by increasing or reducing honey for sweetness.
