For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 6 large egg yolks
  • 1 1/4 cups granulated sugar
  • 1/2 cup key lime juice (freshly squeezed)
  • 2 tablespoons key lime zest
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, melted

For the Topping:

  • 1 cup whipped cream
  • Key lime slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter for the crust. Press the mixture into the bottom of the prepared pan to form an even crust.
  3. Bake the crust in the preheated oven for 10 minutes, then remove and let it cool slightly.
  4. In a large bowl, whisk together egg yolks and sugar until well combined. Add key lime juice, key lime zest, salt, and melted butter. Whisk until smooth.
  5. Pour the filling over the crust and bake for 15-17 minutes, or until the edges are set and the center is slightly jiggly.
  6. Allow the bars to cool completely in the pan on a wire rack, then refrigerate for at least 4 hours or overnight.
  7. Once chilled, lift the bars using the parchment paper overhang. Cut into squares.
  8. Before serving, top each square with a dollop of whipped cream and garnish with key lime slices.

Notes
