  • 3 cloves garlic, minced

  • 1 cup chicken broth
  • 1/2 cup red wine (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a small bowl, mix together minced garlic, dried rosemary, dried thyme, paprika, salt, and pepper to create a spice rub.
  3. Place the lamb breast on a cutting board and rub the spice mixture evenly over both sides.
  4. In an oven-safe pan, heat olive oil over medium-high heat. Sear the lamb breast on all sides until golden brown.
  5. Pour chicken broth and red wine (if using) into the pan to deglaze it, scraping up any browned bits.
  6. Cover the pan with foil and transfer it to the preheated oven. Roast for 2 to 2.5 hours or until the lamb is tender and easily pulls apart.
  7. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.

For a richer flavor, you can marinate the lamb breast with the spice rub and refrigerate it for a few hours or overnight before cooking.
