Layered Lemon Cake with Cream Cheese Frosting

For Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  5. Fold in the lemon zest and lemon juice.
  6. Divide the batter evenly among the prepared pans. Smooth the tops with a spatula.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For Cream Cheese Frosting:

  1. In a large bowl, beat together the cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, vanilla extract, and lemon zest. Beat until well combined.

Assembly:

  1. Place one cake layer on a serving plate. Spread a layer of cream cheese frosting on top.
  2. Repeat with the remaining layers.
  3. Frost the top and sides of the cake with the remaining cream cheese frosting.
  4. Optional: Garnish with lemon slices or zest for decoration.

Notes

Ensure all ingredients are at room temperature for optimal results. Adjust the amount of powdered sugar in the frosting to achieve the desired sweetness.
