  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup plain yogurt
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

  5. Gradually mix in the dry ingredients, alternating with the yogurt, beginning and ending with the dry ingredients.
  6. Fold in the poppy seeds until evenly distributed in the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For an extra burst of citrus flavor, consider adding a simple lemon glaze on top of the cooled lemon poppy seed bread. Mix 1 cup of powdered sugar with 2 tablespoons of fresh lemon juice until smooth, then drizzle it over the bread. Allow the glaze to set before slicing for a delightful finishing touch. This moist and flavorful bread is perfect for breakfast or as a sweet treat with your afternoon tea. Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness. Enjoy the delightful combination of lemony goodness and the satisfying crunch of poppy seeds in every bite!
