Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups confectioners’ sugar
  • 1½ teaspoons peppermint extract
  • 1½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • Green food coloring (optional)
  • ½ cup mint chocolate chips, finely chopped
  • ½ cup granulated sugar (for rolling)

Instructions

  1. In a large mixing bowl, cream together butter and confectioners’ sugar until light and fluffy.
  2. Add peppermint extract and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  4. If desired, add green food coloring to achieve the desired minty hue.
  5. Fold in the finely chopped mint chocolate chips.
  6. Shape the dough into small balls and roll them in granulated sugar.
  7. Place the coated balls on a parchment-lined baking sheet and flatten slightly with a fork.
  8. Chill the formed cookies in the refrigerator for at least 1 hour.
  9. Preheat the oven to 350°F (175°C).
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Allow the mint meltaways to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra burst of mint flavor, consider adding a drizzle of melted mint chocolate on top of the cooled cookies or dusting them with additional confectioners’ sugar before serving. Enjoy these mint meltaways with a cup of hot tea or coffee for a delightful treat.
