  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup cocoa powder
  • 1/4 cup hot water
  • 1 cup pecans, chopped

For the Upside Down Layer:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup pecans, whole

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  4. In a small bowl, mix cocoa powder and hot water until smooth. Take 1 cup of the cake batter and mix it with the cocoa mixture.
  5. In a saucepan, melt the butter for the upside-down layer. Stir in the brown sugar until well combined. Pour this mixture into the prepared cake pan and spread it evenly. Arrange the whole pecans on top.
  6. Spoon alternating dollops of the plain and chocolate batters over the pecan layer. Use a knife to swirl the batters together for a marbled effect.
  7. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then invert it onto a serving plate.
