Place the pork on a rack in a roasting pan, skin-side up, and roast in the preheated oven for 1.5 to 2 hours or until the skin is crispy and the meat is tender.
In a saucepan, mix honey, soy sauce, apple cider vinegar, ginger, and sesame oil. Heat the glaze over low heat until well combined.
Brush the honey glaze over the crispy pork belly during the last 20 minutes of roasting.
Once done, let the pork rest for 10 minutes before slicing. Serve with additional glaze on the side.
