  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • 4 tbsp vegetable oil, for frying

For Dijon Gravy

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

. Prepare Pork Schnitzel

  • Start by seasoning pork chops with salt and pepper.
  • Set up a dredging station: one bowl with flour, one with beaten eggs, and one with breadcrumbs.
  • Coat each pork chop first in flour, then in egg, and finally in breadcrumbs, ensuring an even coating.
  • Heat oil in a skillet over medium-high heat and fry the pork chops for 3-4 minutes per side until golden brown. Drain on paper towels.

2. Make Dijon Gravy

  • In the same skillet, melt butter over medium heat, then stir in flour and cook for a minute.
  • Slowly whisk in chicken broth and heavy cream, cooking until the gravy thickens.
  • Add Dijon mustard, and season with salt and pepper to taste.

3. Serve

  • Plate the schnitzels and drizzle with the rich Dijon gravy. Garnish with chopped parsley for a fresh touch.

Notes

  • For extra crispiness, use panko breadcrumbs.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
  • Make gravy in the same pan for added flavor from the pork drippings.
