Shrimp Scampi with Peppers and Onions

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1/2 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 pound linguine or spaghetti, cooked according to package instructions

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add minced garlic and red pepper flakes, sauté until fragrant.
  3. Add shrimp, cook until they turn pink, then remove and set aside.
  4. In the same skillet, add sliced peppers and onions, sauté until softened.
  5. Pour in white wine and chicken broth, bring to a simmer.
  6. Return cooked shrimp to the skillet, toss with the vegetables.
  7. Stir in chopped parsley, season with salt and black pepper.
  8. Serve the shrimp scampi over cooked linguine or spaghetti.

Notes

For a lighter version, you can use whole wheat or gluten-free pasta. Adjust spice level by modifying the amount of red pepper flakes according to personal preference.
