  • 4 boneless, skinless chicken breasts
  • 1 packet (1 ounce) dry Italian dressing mix
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup sun-dried tomatoes, chopped (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, mix the dry Italian dressing mix, cream of chicken soup, chicken broth, garlic powder, oregano, basil, thyme, onion powder, and black pepper. Pour the mixture over the chicken.
  3. Cook on low for 6-8 hours or until the chicken is cooked through and tender.
  4. About 30 minutes before serving, shred the chicken using two forks.
  5. In a separate bowl, mix the Parmesan cheese and softened cream cheese until smooth. Stir the cheese mixture into the slow cooker, ensuring it's well combined with the shredded chicken.
  6. If using, add the chopped sun-dried tomatoes and stir.
  7. Continue cooking for an additional 30 minutes on low.
  8. Garnish with chopped fresh parsley before serving.

Notes

This creamy Italian chicken pairs well with pasta, rice, or crusty bread. You can customize it by adding vegetables like spinach or broccoli during the last 30 minutes of cooking for an extra nutritional boost.
