Slow Cooker French Dip

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 68 French rolls
  • Provolone or Swiss cheese slices (optional)
  • Additional broth for dipping

Instructions

  1. Trim excess fat from the beef roast and place it in the slow cooker.
  2. Add sliced onions and minced garlic on top of the roast.
  3. In a bowl, mix beef broth, red wine (if using), soy sauce, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper. Pour this mixture over the beef in the slow cooker.
  4. Cover and cook on low for 8 hours or until the beef is tender and easily shreds.
  5. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  6. Strain the liquid from the slow cooker to remove onions and herbs. This will be your au jus for dipping.
  7. Preheat your oven’s broiler. Split the French rolls and place them on a baking sheet.
  8. If desired, add a slice of provolone or Swiss cheese to each half of the rolls.
  9. Broil the rolls for 1-2 minutes, or until the cheese is melted and the edges are toasted.
  10. Assemble the sandwiches by placing a generous portion of shredded beef on each roll.
  11. Serve with a side of au jus for dipping.

For an added depth of flavor, consider searing the beef roast in a hot skillet before placing it in the slow cooker. This step enhances the richness of the dish by caramelizing the meat’s surface.
