Sticky Toffee Pudding for Two

Ingredients

  • 1/2 cup chopped dates
  • 1/2 teaspoon baking soda
  • 1/2 cup boiling water
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

For the Toffee Sauce:

  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). Grease two individual ramekins.
  2. In a bowl, combine the chopped dates and baking soda. Pour boiling water over the dates and let them sit for about 10 minutes.
  3. In another bowl, cream together the softened butter and brown sugar. Add the vanilla extract and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the butter and sugar mixture, alternating with the date mixture. Mix until just combined.
  6. Divide the batter evenly between the two prepared ramekins.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

For the Toffee Sauce:

  1. In a saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved.
  2. Pour in the heavy cream and vanilla extract, stirring continuously until the sauce thickens.
  3. Remove from heat and let it cool slightly.

Notes

This recipe can be easily doubled or halved to adjust the serving size. Serve the sticky toffee pudding warm, drizzled with the toffee sauce.
