Sweet Potato Pie

Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup evaporated milk
  • 1 unbaked pie crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine mashed sweet potatoes, melted butter, granulated sugar, and brown sugar. Mix well.
  3. Add eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until smooth.
  4. Gradually add evaporated milk while continuing to mix until the filling is well combined.
  5. Pour the sweet potato filling into the unbaked pie crust, spreading it evenly.
  6. Bake in the preheated oven for 50-60 minutes or until the center is set and a toothpick inserted comes out clean.
  7. Allow the pie to cool completely before serving.

Notes

For added flavor, consider topping the pie with whipped cream or a scoop of vanilla ice cream before serving.
