Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1/2 cup sun-dried tomatoes, sliced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup pine nuts, toasted
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook fettuccine pasta according to package instructions. Drain and set aside.
  2. Season chicken slices with salt and pepper. In a large skillet, heat olive oil over medium-high heat.
  3. Add chicken slices to the skillet and cook until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant. Add cherry tomatoes, spinach, sun-dried tomatoes, and Kalamata olives. Cook until the spinach wilts and tomatoes soften.
  5. Return the cooked chicken to the skillet. Stir in the cooked fettuccine pasta, Parmesan cheese, fresh basil, and toasted pine nuts. Toss until everything is well combined.
  6. Season with additional salt and pepper to taste. Add red pepper flakes for extra heat if desired.
  7. Serve the Tuscan Chicken Pasta hot, garnished with extra Parmesan and fresh basil.
