V8 Vegetable Soup

  • 2 cups V8 vegetable juice
  • 1 cup low-sodium vegetable broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Add carrots, celery, green beans, and potatoes. Cook for 5-7 minutes until vegetables begin to soften.
  3. Pour in V8 vegetable juice, low-sodium vegetable broth, and diced tomatoes with their juice. Bring to a boil.
  4. Reduce heat to low, add corn, peas, oregano, basil, salt, and pepper. Simmer for 20-25 minutes or until vegetables are tender.
  5. Adjust seasoning to taste and serve hot.

Notes

Feel free to customize this soup by adding your favorite vegetables or adjusting the seasonings to suit your taste. You can also make it heartier by adding cooked pasta or rice. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
