For Cauliflower Mash:
– 1 large head cauliflower, cut into florets
– 2 tablespoons unsalted butter
– 1/4 cup grated Parmesan cheese
– Salt and black pepper to taste
1. In a bowl, combine olive oil, minced garlic, oregano, thyme, lemon zest, lemon juice, salt, and black pepper.
2. Coat chicken breasts with the marinade and let them sit for at least 30 minutes.
3. Grill the marinated chicken until fully cooked, approximately 6-8 minutes per side.
4. In a food processor, blend cauliflower with butter, Parmesan cheese, salt, and black pepper until smooth.
5. Steam cauliflower florets until tender. Drain any excess water.
6. In a jar, mix chia seeds, almond milk, honey or maple syrup, and vanilla extract.
