Roasted Garlic Parmesan Yellow Squash

Ingredients

  • 4 medium yellow squash, sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine sliced yellow squash, olive oil, minced garlic, Parmesan cheese, oregano, garlic powder, salt, and pepper. Toss until the squash is well coated.
  3. Spread the squash mixture evenly on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes or until the squash is tender and golden brown, stirring halfway through.
  5. Remove from the oven and garnish with fresh parsley if desired.
  6. Serve hot and enjoy your Roasted Garlic Parmesan Yellow Squash!
