Roasted Garlic Parmesan Yellow Squash

- 4 medium yellow squash, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced yellow squash, olive oil, minced garlic, Parmesan cheese, oregano, garlic powder, salt, and pepper. Toss until the squash is well coated.
- Spread the squash mixture evenly on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes or until the squash is tender and golden brown, stirring halfway through.
- Remove from the oven and garnish with fresh parsley if desired.
