  • 34 pounds beef roast (such as chuck or round)
  • 1 jar (16 ounces) pepperoncini peppers, drained and sliced
  • 1 cup beef broth
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the beef roast with salt and pepper.
  2. Place the roast in the slow cooker.
  3. Scatter sliced onions, minced garlic, and pepperoncini peppers over the roast.
  4. Sprinkle dried oregano and thyme over the ingredients.
  5. Pour beef broth into the slow cooker.
  6. Cover and cook on low for 8 hours or until the beef is tender and easily shreds.
